Orange Cranberry Cake (Eggless)

This Orange Cranberry Cake is eggless and is made with fresh orange juice, it has no added colors, flavors. Yes ! All the flavor and color is from the fresh juice and zest. It adds a citrus punch in each bite and a great dessert to serve with tea.

 

Orange always has a special place in our home and hearts, it a fruit full of flavors. Balanced with the perfect sweetness and citrusness, it attains a permanant  place on the grocery list on each time.It is almost used in any juice, smoothie we make, i use the zest to flavor pancakes,cakes and almost any thing. You can also dry the peels for nice aroma or use it to remove suntan. 

 

Making this cake brings everyone to the kitchen for its aroma. Your place smells wonderful each time you make it.This is my keepsake recipe for years now and a is crowd pleasing dessert. It will be yours too if you try.

INGREDIENTS TO MAKE ORANGE CAKE
    • Oranges : Oranges that has thin skin are full of juice. Juice and zest are used in this preparation.
    • All purpose flour : Regular flour or maida works well. Can substitue with wheat flour but might require extra quarter cup of juice.
    • Sugar/jaggery : Regular sugar works fine, but for a healthier version we can use jaggery powder.
    • Cornflour : Not a must to use but adds some crunch to the cake, if you like softer cake skip it.
    • Baking powder and soda : For rising the cake
    • Dried cranberries : I preper using dried cranberries as they don’t add extra moisture and break and bleed the cake.
    • Orange zest : This is a must and important ingredient, it adds all the color and the needed flavor for the cake. Scrape only the ornage part and aviod the white or you will end up with bitter taste.
    •  Confectioners sugar : I fyou prefer to glaze the cake. 

WHAT MAKES THIS ORANGE CAKE EASY TO MAKE?

  1. Can be made in a bundt pan , loaf , or even into muffins.
  2. This cake is very simple to make and you do not need a hand mixer.
  3. There are no added colors and flavors.
  4. Has less sugar compared to other cakes, can be replaced with jaggery if needed
  5. Replace wheat flour to make it more healthy, just add 1/4 cup more juice.
  6. Substitute butter to any oil like olive oil etc.
  7. You can also make orange muffins with the same batter, just sprinkle sugar on top. 

HOW TO MAKE ORANGE CRANBERRY  CAKE?

 

To make this awesome cake, let’s start by sifting the dry ingredients together. Add the flour, salt, baking powder, baking soda and sift through a seive. It’s okay even if you do it twice.

 

This will clear any lumps in flour as well mix the flour evenly with baking powder and soda. Also it make sthe flour flowy and makes it easier to mix in less time. Avoids over mixing the cake batter which results in a hard cake.

 

Making cake is an art, enjoy the process as you make it you always love the end result. I prefer to bake only when i have ample time to avoid failures. 

It needs a bit of patience to make it, so enjoy the process as much as you would savour a bite of cake.

 

In a seperate bowl add sugar and butter and whisk with a spoon or whisker. whish for few minutes till butter and sugar is combined and is creamy and white.

 

Whisk only in one direction, clock wise or anti clock wise. you do not need a electric beater to do this, few minutes of hand work should do it. I have a kitchen aid mixer and electric beater but do not use them for this cake. So no more extra washing of dishes.

 

Add freshly squeezed orange juice and mix well. The juice should be squeezed just before adding.

 

 

Now add the flour in 2 or 3 bathes, simply mix in a single direction few times. Mix only till the flour combines well. Do not over mix. 

 

Now when you add the flour you would see airbubbles forming in the batter. this happens when the baking powder and soda reacts with the orange juice.

Quickly with out wasting any time add the dried cranberries and fold a couple of time to mix. 

Tranfer the batter into a greased cake pan amd bake in a preheated oven till toothpick comes out clean in the center.

 

The smells done and your kitchen will be filled with loads os orange aroma no candle or fresher can give.

TOP TIPS FOR THIS ORANGE CRANBERRY CAKE?

  1. Powder sugar if needed to whisk quickly especially if using spatula.
  2. Squeeze oranges just before adding as orange juice becomes bitter quickly.
  3. Do not skip orange zest as this is what gives the required flavor. Use the orange part of the zest not the white as it is bitter.
  4. While combining the flour with the wet mixture mix gently do not over mix. Fold cranberries to combine.Over mixing will make the cake hard.
  5. This cake isn’t very sweet, perfect to serve with tea add orange glaze or sprinkle sugar crystals on top after turning out from cake mould.
  6. If serving as a dessert add an optional orange glaze (recipe below) to make it more sweeter.

ORANGE GLAZE (Optional)

  1. Combine 1/4 cup powdered sugar ,1/4 cup juice and 1/4 tsp orange zest in a pan and cook on low flame for 2-3 minutes till everything is combined and shiny.
  2. Pour on the top orange cake and slice as required.

Ingredients

To Seive

  • 1 cup All Purpose flour 120 gms
  • ½ tsp baking soda
  • ½ tsp baking powder
  • pinch of salt
  • 1 tbsp cornflour optional

To Whisk

  • ¼ cup butter
  • ½ cup sugar
  • ¾ cup orange juice freshly squeezed
  • ½ tsp orange zest do not skip as this adds the needed flavor
  • ½ cup dried cranberries

Instructions

  • Pre heat oven to 350°F/180°C
  • Seive all dry ingredients from the To Seive list in a bowl
  • Add powdered sugar , melted butter and whisk till creamy.
  • Add Orange juice , zest and mix.
  • Add flour in 3 batches and combine gently do not over.
  • Grease a baking pan and bake the cake on 350° F/180° C for 35 - 40 mins
  • When done let cool on baking rack and slice to serve
