Blueberry Crumble Bars (Eggless)

Fresh blueberries are flavored with lemon juice ,lemon zest and sandwiched between a shortbread base and crumble oats topping. Serve these as is for a snack and with a scoop of your favourite icecream.These blueberry crumble bars are so easy and tasty to make a home.

 

Blueberries are great addition to any baked dish. While they are available during most of the year, they are abundant in summer. If you have been to blueberry picking this summer don’t forget to make these amazing blueberry crumble bars. These breakfast bars use the same dough for the base as well the crumble top which makes them simple and easy to make.

 

The shortbread base is slightly sweetened, while the blueberry filling with a hint of lemon juice and zest adds loads of fruitiness and loads of freshness at each bite. So, this bar is an amalgamation of flavors in a single bite. Enjoy this make ahead breakfast bar for any busy morning.

 

This recipe is a keepsake as well a great summer retreat for the whole family to enjoy. These blueberry crumble bars stores in refridgerator for upto 5 days only if they last until then. 

INGREDIENTS FOR THE BLUEBERRY CRUMBLE BAR

  • Blueberries : Fresh blueberries gives the juicy delicous taste to these bars.
  • All Purpose Flour : Used for the shortbread base and crumble top.
  • Butter : Use cold butter and cut into small cubes.
  • Lemons : Zest a small lemon only the yellow part and juice the lemon later.Adds a nice tangy flavor to the blueberries.
  • Sugar : The shortbread base and crumble top uses a mix of brown and white sugar. Using dark brown sugar yields a darker bars.
  • Oats : Old fashioned oats are added to the crumble top to add a nice crunch to the bars. Reduce the quantity of the oats from the flour in the recipe.
  • Cornstrach/ Corn flour : This lets you absorb the moistness of the blueberries, if using frozen berries add a tsp more.
  • Cinnamon Powder : Add nice aroma and flavor to the bars.
  • Baking Powder : Acidic element used in this bake.
  • Salt : Enhances the sweetness of the sugars used.

LAYERS FOR BLUEBERRY CRUMBLE BARS

The Blueberry Crumble Bars has three layers that are simple to make, while the bottom and top layers are the same with slight variations, the filling is so simple to make.

  • Shortbread layer : This layer is buttery and soft, made with a simple mix of flour, sugar , cold butter and baking powder. Adding salt and cinnamon powder elevates the taste of this layer.
  • Blueberry Filling : This layer is fruity, sweet, juicy, sweet and tangy.Fresh blueberries are combined with sugar, lemon juice, zest and cornstarch.
  • Crumble top : This top layer is crumbly and slightly crunchy. Add quarter cup of oats for that extra crisp. The crumble layer of the bar hold the blueberry filling together.

Together all the layer make this wonderful and tasty bars.

HOW TO MAKE BLUEBERRY CRUMBLE BARS?

To make the shortbread layer we need cold butter. To sweeten the layer add sugar, a combination of brown and white sugar perfectly balances the sweetness and carmalizes when baked. Mix sugars and flour together.

Add cold butter and mix gently by rubbing between the palms. Evenly coat the flour, it should look like a crumbles.

Set a some flour aside for the crubmle top and press the rest in a parchment covered pan. Any square pan or a glass bowl works well.

Preheat the oven to 375 degree F. Press the crumbled flour on to the pan and press to flour on to pan with the back of a spoon or with fingers. Firmly press all the flour to set evenly. 

Bake for 10 minutes and set aside to cool.

While this is cooling let’s prepare the next layer. Add blueberry to a mixing bowl. To this add lemon juice, zest , cornflour and sugar. combine gently to coat the berries ebenly with sugar and lemon juice.

You can add as many blueberries as you like the more the better.

Add some oats for a crunch to the remaining crumble flour and spread on the top of the blueberry filling.

Spread the flour evenly and bake again for 45- 50 minutes till the top layer is brown.

Let the bars cool completely before slicing to desired size.

Enjoy a slice of this bar as a snack or breakfast or with a scoop of icecream as dessert.

Replace the blueberries with any seasonal berries.

  • 8 x 8 square Cake Pan
  • Mixing bowls

Ingredients

Shortbread Base

  • cup All Purpose Flour levelled & sieved.
  • ½ tsp Baking Powder
  • ¼ tsp Cinnamon Powder
  • tsp Salt
  • ¼ cup White Sugar
  • ¼ cup Brown Sugar Light or Dark
  • ½ cup Cold Butter cubed

Crumb Top

  • ¼ cup Oats (If adding Oats for crumb top reduce flour by 1/4 cup)

Blueberry Filling

  • 2 cups Fresh Blueberries
  • 2 tsp Lemon juice
  • 2 tsp Lemon Zest
  • 3 tbsp Sugar
  • tsp Corn Strach / flour

Instructions

Shortbread Base

  • Pre heat the Oven to 375° F / 190 ° C.
  • Grease and layer a 8 x 8 inch pan with parchment paper leaving paper to hang over edges.
  • In a bowl or food processor add flour, baking powder,salt, cinnamon powder, both sugars and combine well.
  • Add cold butter pieces and mix with hand by combining well. This will not form a dough but will crumble together with pressed with fingers.
  • Save 1/2 cup for the top crumble and transfer the rest of dough in bake pan and press with spoon or hand evenly.
  • Bake for 10 minutes and let rest for 5 minutes.

Blueberry Filling

  • Add blueberries, lemon juice, lemon zest, sugar and corn flour and combine well to mix.
  • Transfer blueberry filling to the baked crust and layer evenly.
  • Add 1/4 cup oats to remaining shartbread mixture and layer on top of blueberry filling.
  • Bake for 45 - 50 minutes till the top and edges are brown.
  • Remove from oven and let cook completly before slicing to bars.
