RAW MANGO CASHEW CURRY
A delicious curry that is slightly sweet and tangy cooked with fresh tender mangoes and raw cashews is a must recipe for all mango lovers.

- 180 gms Green Mango Medium size
- 120 gms Cashews Raw if available
- 250 gms Onions 3 - 4 No.
- 2 - 3 green chilies
- 15 - 20 Curry Leaves
- 2 tbsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tbsp Red Chili Powder
- 3 tbsp Oil
Soak Cashews for 30 mins if possible. Soaking will save cook time.Cook Cashews till tender and set aside. In a medium pan heat oil and add diced onions, green chiles, curry leaves and saute for 2 minutes. Add Cashews,Mango pieces.
Add salt,turmeric,cumin,coriander and saute for 5 minutes. Add Water and cook till mangoes are cooked. Add ½ tsp sugar if needed.
Adjust seasoning as per taste and serve hot with rice.
