RAW MANGO CASHEW CURRY

Raw Mango Cashew curry is a tangy and delicious curry made with raw cashews and tender not so sour mangoes. A great curry to pair with rice and a must try recipe to fall in love with forever.

 

Mangoes are king of fruits abundandly grown in the Indian sub continent. Mangoes are one of the most lovable fruits in any forms raw or ripe. The raw mangoes from early spring are not sour and tender to eat. Raw mangoes sliced to pieces and rubbed with salt and chili powder takes back many of us to childhood summer days.

 

This recipe is very unique and not known to many, at least to me, until I came across this during my graduation days where cashew trees are abundant. Most of the local cuisine included raw cashews in pretty much all the recipes and this raw mango cashew curry stood out among all of them.

 

After a few tries and tests this recipe was finally approved, but the fresh ingredients seasonally has that special taste. There are 100’s of variaties of mangoes in India. Mangoes we get here in USA aren’t sour enough, but managable.

 

Raw cashews taste much better than the regular store bought ones. Do try this recipe with raw cashews if you ever get a chance.

 

This is a very quick and easy curry to make with few ingredients.

INGREDIENTS FOR THIS RECIPE
    • Raw Mangoes : Mangoes that are not very sour goes well in this recipe.
    • Cashews : Raw cashews are preferable. Can you regular cashews.
    • Onions : Any onions can be used.
    • Curry Leaves : These add nice flavor to the recipe.
    • Green Chilies : Adds needed spice to the recipe. Add as per your spice level. 
    • Coriander Powder : For nice the nice taste and aroma. 
    • Cumin Powder : For nice flavor.
    • Red Chili Powder : For nice color as well spicy flavor.

HOW TO MAKE MANGO CASHEWS CURRY?

If using fresh cashews nuts, slice them in half and peel the cashews from it. Wash to clear any debris.

 

Boil some water in a sauce pan and season with little salt. when water boils add the dry cashews or raw cleaned cashews and cook them till cooked.

Heat a pan and add some oil. Add diced onions, green chiles, curry leaves and cook till slightly brown.

 

Add sliced mango pieces , mix and cook for few minutes. Add cashews, corinader, cumin and red chili powder and mix well. 

 

Add water and cover and cook till the mangoes are completely cooked.

Mangoes are sliced thin so it should’t much time to cook. 

 

Water from cooked cashews can also be added for a nice taste. As it is already seasoned with salt, adjust as per salt in the recipe.

 

Adjust salt and red chili powder as per taste, it varies depening on the sourness of the mangoes.

Add a half a teaspoon of sugar to adjust the tartness of the mangoes.

Serve this tasty curry with hot rice and ghee. 

Not many people knew this recipe so do try this nect time you find a nice raw mango.

 

Other recipe you can cook in the similar fashion with raw cashews is the tomato cashew curry. Replace mangoes with tomatoes and a pinch of garam masala at the end. 

TOP TIPS TO FOR RAW MANGO CASHEW CURRY
  1. Use tender mangoes that are not sour , prefer the ones we eat as raw.
  2. Soak the Cashews in water for 30 minutes to cook quickly.
  3. Save the cooked water from cashews and add it to the curry to cook , this enhances the flavor.
  4. Use either green chilies or red chili powder if you prefer less spice.

Ingredients

  • 180 gms Green Mango Medium size
  • 120 gms Cashews Raw if available
  • 250 gms Onions 3 - 4 No.
  • 2 - 3 green chilies
  • 15 - 20 Curry Leaves
  • 2 tbsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tbsp Red Chili Powder
  • 3 tbsp Oil

Instructions

  • Soak Cashews for 30 mins if possible. Soaking will save cook time.
    Cook Cashews till tender and set aside.
  • In a medium pan heat oil and add diced onions, green chiles, curry leaves and saute for 2 minutes. Add Cashews,Mango pieces.
  • Add salt,turmeric,cumin,coriander and saute for 5 minutes. Add Water and cook till mangoes are cooked. Add ½ tsp sugar if needed.
  • Adjust seasoning as per taste and serve hot with rice.
