Oatmeal raisin cookies are more than just a delicious treat. Sweet and comforting, with a subtle hint of spice from the cinnamon. The honeyed raisins add a touch of fruity sweetness, while the oats offer a nutty, earthy depth that rounds out the flavor profile.
Preheat Oven to 356 F or 180 C and line cookie tray or baking pan with parchment sheet.
In a mixing bowl whisk softened butter for a minute or two till fluffy. Add both sugars, flax egg, vanilla essence or paste and whisk till soft and combined.
Add baking powder, baking soda, salt, cinnamon powder and flour to the mixture. Combine till mixed with a spatula till all the ingredients are combined to form a dough.
Add rolled oats and raisins and mix well.
Use a cookie scoop or a tablespoon to measure out the ccokies and place them on baking tray. Leave 2 inch gap in between each cookie ball.
Bake cookies for 13 - 15 mins. Remove from oven and allow the cookies to rest for 5 mins. Slide the parchment paper on to a cooling rack for 15 mins.

Store cookies in an airtight container for upto a week. Cookies can be frozen for 3 months. Cookies are fragile when hot. Do not attempt to move them in any way for the first 5 mins.
