Oatmeal Raisin Cookies (Vegan)

Oatmeal raisin cookies are more than just a delicious treat. Sweet and comforting, with a subtle hint of spice from the cinnamon. The honeyed raisins add a touch of fruity sweetness, while the oats offer a nutty, earthy depth that rounds out the flavor profile.

Ingredients

  • 150 g 5.3 oz Butter at room temperature
  • 100 g 1/2 cup Soft brown sugar
  • 100 g 1/2 cup granulated sugar
  • 1 flax egg (1 tbsp Flax meal + 2 tbsp water)
  • 175 g Flour (1 1/3 cup + 1 tbsp) flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp Vanilla
  • ½ tsp salt
  • 1 tbsp cinnamon powder
  • 100 g rolled oats (1 1/4 cup oats)
  • 100 g raisins 2/3 cup

Instructions

  • Preheat Oven to 356 F or 180 C and line cookie tray or baking pan with parchment sheet.
  • In a mixing bowl whisk softened butter for a minute or two till fluffy. Add both sugars, flax egg, vanilla essence or paste and whisk till soft and combined.
  • Add baking powder, baking soda, salt, cinnamon powder and flour to the mixture. Combine till mixed with a spatula till all the ingredients are combined to form a dough.
  • Add rolled oats and raisins and mix well.
  • Use a cookie scoop or a tablespoon to measure out the ccokies and place them on baking tray. Leave 2 inch gap in between each cookie ball.
  • Bake cookies for 13 - 15 mins. Remove from oven and allow the cookies to rest for 5 mins. Slide the parchment paper on to a cooling rack for 15 mins.

Notes

Store cookies in an airtight container for upto a week. Cookies can be frozen for 3 months. 
Cookies are fragile when hot. Do not attempt to move them in any way for the first 5 mins.
