Sweet Potato and Carrot soup

Equipment

  • Blender
  • Stock pot/Medium size pan

Ingredients

  • 2 tbsp olive oil
  • 1 tsp butter
  • ¼ cup onions diced
  • 1 lb sweet potatoes
  • ½ lb carrots
  • ¼ cup orange bell pepper (optional)
  • cups vegetable broth or water
  • tsp cumin powder
  • 1 tsp red chili flakes adjust as per heat level
  • ½ tsp black pepper powder optional
  • salt to taste
  • 2 tbsp roasted pepitas
  • ¼ cup cream totally optional.. skip for a vegan soup

Instructions

  • In a pan add olive oil and butter. Saute onions till translucent and obsorbs flavor.
  • Add sliced potatoes, carrots, bell pepper and saute for a few minutes.Add seasonings, cover and cook till the veggies are slightly cooked.
  • Add vegetable broth or water and cook till all the veggies are cooked and soft.
  • Let cool and blend the a smooth texture in a blender. Trasfer to the pan again and adjust seasoning, add a dash of cream and simmer for 2 mins. Add dried seasing if desired.
  • Garnish with croutons or roasted peptias or any desired nuts and enjoy.

Notes

  1. Skip cream as the sweet potatoes makes the soup creamy and silky. 
  2. If skipping cream, transfer to a bowl and serve.
