Sweet Potato & Carrot Soup

Silky,smooth,slightly sweet & savoury this soup is so delicious and filling. Very easy to make and great for a chilly day. A perfect recipe for everyday lunch, dinner or can be served as starter soup. The natural color from sweet potatoes, carrots and orange bell peppers make it a great autumn soup.

 

The silkyness of this soup comes from sweet potatoes so adding cream is an option to this soup. While carrots add a hint of sweetness to this soup.

 

 

A bit of red pepper flakes, cumin, and fresh ginger flavors the soup. So enjoy a bowl of this creamy goodness today. 

 

 

Add a dash of roasted pepitas to add crunch and a splash of cream or coconut cream for vegan choice and serve warm.

 

INGREDIENTS TO MAKE THIS SWEET POTATO AND CARROT SOUP

    • Sweet Potatoes, Carrots : These both are the base ingredients of this soup. They add the needed creaminess and taste to the soup.
    • Orange bell pepper : This can an optional add in to the soup, but still adds a nice flavor to the soup.
    • Onions : Adds more flavor to the soup.
    • Ginger : Fresh ginger boosts flavor to the flavor, can be substituted with ginger powder.
    • Veggie stock/water : Enhances the flavor of the veggies in the soup as well helps in easy blending the soup. 
    • Cumin,Red pepper flakes : Cumin adds a robust flavor as well balances the flavors , while red peppers flakes or paprika cuts the sweetness of the sweet potaotes and carrots.
    • Pepitas : Garnish with peptias or any roasted nuts for a nice crunch to the soup.

 

HOW TO MAKE THIS AWESOME SOUP?

Slice the sweet potatoes, carrots and bell pepper in thin slices. This will help them cook quicker. 


In a stock pot or pan add butter/oil or a mixture of both. Add diced onions and cook on low flame. All the flavor from butter and oil infuses into onions. When transculcent add the sliced sweet potatoes. carrots and bell peppers. 


Cover and cook stirring in between. Add salt, cumin, ginger, red pepper flakes.  

When the veggiess are slightly cooked add water or vegetable stock.

Cover and cook for 5 minutes and Let it cool.


Transfer cooled mixture to a blender and blend till it gets a smooth texture.  Use an immesion blender and blend as needed.


If using a blender trasfer to the stock pot and adjust seasoning and consistency of the soup.

Look at the amazing texture of the soup, so creamy and a colorful. Sweet potatoes adds the nice creamy texture when blended. The natural color from the carrots, orange bell peppers and turmeric brings a smile at the dinner table.


Garnish as needed with a spalsh of cream and pepitas or roasted nuts.

Equipment

  • Blender
  • Stock pot/Medium size pan

Ingredients

  • 2 tbsp olive oil
  • 1 tsp butter
  • ¼ cup onions diced
  • 1 lb sweet potatoes
  • ½ lb carrots
  • ¼ cup orange bell pepper (optional)
  • cups vegetable broth or water
  • tsp cumin powder
  • 1 tsp red chili flakes adjust as per heat level
  • ½ tsp black pepper powder optional
  • salt to taste
  • 2 tbsp roasted pepitas
  • ¼ cup cream totally optional.. skip for a vegan soup

Instructions

  • In a pan add olive oil and butter. Saute onions till translucent and obsorbs flavor.
  • Add sliced potatoes, carrots, bell pepper and saute for a few minutes.Add seasonings, cover and cook till the veggies are slightly cooked.
  • Add vegetable broth or water and cook till all the veggies are cooked and soft.
  • Let cool and blend the a smooth texture in a blender. Trasfer to the pan again and adjust seasoning, add a dash of cream and simmer for 2 mins. Add dried seasing if desired.
  • Garnish with croutons or roasted peptias or any desired nuts and enjoy.

Notes

  1. Skip cream as the sweet potatoes makes the soup creamy and silky. 
  2. If skipping cream, transfer to a bowl and serve.

    This looks like a great soup to have on a day after a cold walk with my dog, Henry. He also love sweet potato and carrots. Maybe I can make him a bit of cooked sweet potato and carrots as a treat. I’m definitely saving this recipe and sharing it with my dog friends. Thanks!
