Paneer Tikka Pizza Discs

This kid friendly fusion recipe is a fun way to serve bite sized appetizers to your family or a party. Very simply to make and astonshing to taste.

Equipment

Ingredients

For Paneer Marination

  • 2 tbsp Mustard Oil
  • 1 tsp Kashmiri Chili Powder
  • 1 tsp Besan
  • ¾ tsp Coriander Powder
  • ½ tsp Roasted Cumin Powder
  • 1 tbsp Lemon Juice ½ lemon appox.
  • 1 tsp Tandoori Masala
  • ½ tsp Kasoori Meethi Dried Fenugreek leaves
  • 1 tbsp Water or Yogurt/Sour Cream
  • Salt to taste

For Paneer Tikka

  • 150 gms Paneer (cubed to small pieces)
  • ¼ cup Onion diced
  • 3 tbsp Capsicum 30 gms diced
  • 2 tbsp Tomato deseeded and diced
  • 1 tbsp Oil any oil

For Mint Spead

  • 2 tbsp Mint Pesto (recipe link in notes)
  • 2 tbsp Sour Cream

For Bread Discs

  • 12 Bread slices White or Brown
  • ¼ cup Shredded Cheese Mozerella
  • 1 tbsp Melted Butter

Instructions

Prepare Marination

  • Mix all the ingredients from the marination list to form a smooth paste.
  • Cut Paneer, onions, green peppers (capsicum) , tomato to tiny pieces. (use pic/video for referernce). Mix paneer and veggies to the marinate and leave for 10 - 15 mins.

To Prepare Bread discs

  • While its marinating prepare the bread discs and mint pesto.
  • Use a large disc, bowl to make circles of bread ( 12 pieces). Set 6 bread discs aside. Now with slightly smaller bowl or ring make cut 6 rings. Save the center disc to make 3 smaller discs and rings.
  • In a small bowl add 2 tbsp Sour Cream and Mint Pesto (mint corinader chutney) and mix well.

Cook Paneer

  • In a pan add oil and cook the marinated paneer for few minutes, till oil starts leave from edges.

Assemble Paneer Discs

  • Preheat the Oven to 350°F/180°C
  • Spread prepared mint spread on 6 large discs and place the ring on the top. That creates a space in center for the paneer tikka.
  • Add a tbsp of cooked panner tikka in the center, adjust to all the discs. Top with grated cheese.
  • Brush the edges of the bread discs with butter, this adds nice color when baked
  • Bake for 8 to 10 minutes till edges of bread are brown and cheese is melted.
  • Serve hot with left over mint pesto chutney, your favourite sauces or as is.

Notes

To make mint pesto : In this recipe i used the mint pesto from my Grilled Tofu Recipe excluding the almond flour. 
You can use mint corinader chutney if you desire but do try the Mint Pesto from the above link.
This recipe is medium spiced, add additional chili powder for more spicy levels.
