Grilled Tofu & Veggies with Mint Sauce

Grilled tofu and veggies with mint sauce is a quick easy and healthy way of serving veggies in a flavorful marinate. This recipe is spicy and tangy and the best starter to serve for an outdoor party.


Grilled veggies need not taste the same all the time. Are you bored of the same old marination every time you grill your veggies?


If so try this amazingly flavorful marination recipe. It is fresh, green, nutty and more over so flavorful. Bright green from fresh corinader and mint leaves, nutty from soaked almonds, tangy from fresh limes and finally spicy from the green chiles/jalpenos. 


A perfect balance of all the flavors flavors. The addition of lemon/lime zest adds a zing to the marination.


Tofu is a good source of protein for those who follow a vegeterian diet.The minty pesto sauce is super easy to make an add that extra spicy and zing for a fresh summer flavor.

Adjust the spiceness as needed.This recipe lets you prepare the skewers ahead saving you extra time to spend with guests and enjoy warm outdoor evening.

INGREDIENTS REQUIRED TO MAKE THESE SKEWERS

  • Tofu : Use Extra Firm variety for this recipe. Drain the excess water from the tofu by using paper towels or lint free clean cotton towel.
  • Almonds : Blanched almonds are easy to grind. These adds the nutty texture to the recipe.
  • Mint/Cilantro leaves : Use both or only mint. using fresh  leaves ensures a flavorful outcome.
  • Green chiles : These add the needed spicy to the recipe, skip for less spicy, add red pepper flakes or pepper powder as per taste.
  • Lemon juice, lemon zest : Lemon juice adds the needed tang to the recipe to balance the spice levels. Use lemon zest for if you love more lemoney flavor or skip totally.
  • Oil : Use any oil of choice, if prefer using mustard oil for grilled recipes.

PROCESS TO MAKE THESE TOFU MINT SKEWERS

Let’s prepare the Mint pesto to enjoy these awesome fresh tofu skewers.

Slice your tofu, veggies into quarters and set aside.

Here are the possible veggies you can use to make these fresh lemony tasting skewers.

 

  • Mushrooms
  • Squash (Any color)
  • Bell peppers (all colors)
  • Paneer (Indian Cottage cheese)
  • Corn
  • Onions

Add prepared mint pesto and mix well so it coats all the veggies.

Let them sit aside for altleast 30 mins or more as time permits.

This will let all the flavors of mint, lemon and spice infuse to tofu or paneer mainly. Both are so neutral to taste so do not skip the marination process.

 

Skew the veggies to a barbeque stick and set aside.

Cooking Options: 

 

There are different methods to cook these tofu skewers.

 

  • Using Grill : Preheat the grill to 400 degree F and when ready , spray oil and arrange the skewers in a single layer, cover and grill turning in between.
  • In the Oven : Preheat the oven to 400 degree F and in a baking set , arrange all the skewers and bake for 20 – 30 minutes turning them halfway till its baked.
  • On Stove top : Heat a tawa or dosa pan, spray some oil  cook them turning every 5 minutes. Cook all sides and grill on the fire finally to get the grilled feel.

Whatever is your mode of cooking these lemon and minty tofu skewers will taste so amazing.


All the flavors from the lemon zest would linger at each bite. Soft tofu or paneer, perfectly spiced veggies make this an awesome appetizer to enjoy again and again.

TOP TIPS FOR THIS RECIPE

  1. Always use Extra Firm Tofu and drain as much water as possible from tofu.
  2. Taste your mint pesto and adjust seasonings as per taste.
  3. Add ginger and garlic if you prefer.
  4. Marinate tofu and veggies as much time as possible.Prepare these skewers ahead of time and refridgerate for a party.
  5. Alter veggies as per your chioce, mushrooms, any color peppers, any color squash works well.

Grilled Tofu Skewers with Mint Sauce

Equipment

  • BBQ Grill or
  • Any Pan

Ingredients

  • Wooden Skewers soaked in water for 30 mins
  • 6 0z Extra Firm Tofu
  • ¼ cup onions
  • ¼ cup chopped green peppers
  • ¼ cup chopped red peppers
  • ¼ cup squash/zucchini half
  • ¼ cup Oil (i prefer mustard oil for the flavor)

To Grind

  • 10 -12 Soaked Almonds
  • ¼ cup Mint leaves
  • ¼ cup Cilantro leaves
  • 2 -3 Green Chilies ignore for non spicy
  • 1 tbsp lemon juice
  • 1 tsp lemon zest for extra lemon zing flavor
  • salt to taste
  • 1 tsp cumin seeds or cumin powder
  • 1 tsp coriander seeds or powder

Instructions

  • Drain water from tofu and slice into quartered cubes. Chop desired veggies too in the same size.
  • Grind all the ingredients from the grind list to a smooth paste. Add oil while grinding. This looks similar to pesto.
  • In a medium bowl add tofu and veggies and coat with mint sauce/pesto. Marinate for 1 - 2 hours.
  • Preheat a grill to meduin high or 350° F or a grill pan to medium high. Brush oil.
  • Skewer marinated tofu and veggies alternating each variety onto a skewer and place on the grill.
  • Cook on each side for 3- 5 minutes till charred. Brush oil if desired and turn from side to side every 2 - 3 minutes to avoid burning.

Notes

To cook using grill pan on Stove:
  1. Brush oil and when the pan is very hot line the skewers and brush oil. Turn on skewer each side after every minute to avoid burning.
  2. Repeat the process to grill all the skewers.
  3. For a more charred effect slightly char it on direct flame gently turning evenly.
