Add a couple of tablespoons of parmesan cheese for a robut flavor and crunch to these potatoes. Skip it totally for a vegan recipe, but they are still crisper.

WHAT ARE THE DIFFERNT METHODS OF COOKING BREAKFAST POTATOES?
In a Pan
Tradionally breakfast potatoes are cooked in a skillet. This method uses loads of oils and sometimes they end up greasy and add an after taste of oil. For any brand of large potatoes , they are cut and cooked aldente and fried in oil. to make them extra cripser they are fried in oil. So heat, the pan and oil plays a crucial role in making the best breakfast potaoes.
Baking :
This is another traditional method to avoid using more oil. Potatoes are seasoned and lined in a baking tray and baked @ 400 degree F for 30 minutes or more turning halfway abd till done. All it needs is a ton of time in hand.
Air Fry :
Air fryer does the job of the above two methods in a very less time by using less oil. This device not only makes them crisper with just a coat of oil but also saves loads of time.

INGREDIENTS TO MAKE BREAKFAST POTATOES
The ingredient list is so simple to make these breakfast side dish. The chioce of seasoning can be adjusted a per taste preference.

- Baby Potatoes : I like using baby potatoes for this recipe. They are small, creamy and easy to cook. If using large potatoes dice them into equal quarter size pieces.
- Olive Oil : The oil helps to coat the seasoning well. Any other oil can be used like vegatble, canola, etc..
- Seasoning : A wide variety of seasoning can be added to this recipe. Garlic powder, onion powder, dried herbs like italian herbs, oregano, dill, thyme etc.. Use fresh herbs if preferred, dice them and add.
- Salt : Add salt to taste.
- Red chili flakes/paparika : Adds a little heat to these potatoes, adjust as per preference. If skiping these simply substitute with pepper powder.
- Parmesan cheese : This is totally optional, but adds a nice robust taste to the potatoes.
HOW TO MAKE BREAKFAST POTATOES IN AIR FRYER?
Brush the baking tray in Air Fryer with a oil and preheat the Air Fryer to 400 degree F.
Wash and dry the potatoes with a clean towel. I like to slice my baby potatoes in half, they will turn out crisper on the outer side. If using whole baby potatoes pierce a fork for them to absorb the seasoning.
In a bowl add a tablespoon of oil and the seasonings except the cheese.
Mix well and add the sliced potatoes and stir with a spoon or spatulla. This will coat the potatoes well with the seasoning mixture.
Grate parmesan cheese and mix to combine.
Transfer the seasoned potatoes to air fryer basket and spread them in a single layer.
Air fry the potatoes for 12 minutes and check to see if they are cooked.
Turn them and cook for a minute or two depending on the crispness.
Transfer to a serving bowl and serve as a side dish with your favourite dressing or as is.

Equipment
- Air Fryer or
- Conventional Oven or
- Medium Pan
Ingredients
- 1 lb baby potatoes
- 1 tbsp olive oil
- 1 tsp italian seasoning
- 1 tsp garlic powder
- 1 tsp coriander powder optional
- 1 tsp red chili flakes
- 1 tsp salt
- 2 tbsp parmesan cheese grated or powder
- 1 tsp diced parsely or coriander leaves
Instructions
- Preheat the Air fryer or oven to 400 ° F
- Wash and dry the baby potatoes. Slice them in half.
- In a bowl add a tablespoon of oil and other seasoning except cheese and mix well to combine.
- Add sliced potatoes and mix well to coat the potatoes with seasoning, grate parmesan cheese and give a stir.
- Grease Air fryer tray or baking pan with oil. Spread the potatoes in a single layer and air fry for 12 minutes. Turn the potatoes and fry for 2- 3 minutes depending on the crispness needed.
- If baking bake for 25 - 30 minutes, adjust time as per size and quantity.
- Transfer to a serving bowl , garnish with diced parsley and extra cheese if needed. Serve warm with a choice of dipping sauce.
