Avocado Soup recipe

A delicious soup that takes only minutes to make. Creamy Avocados, fresh and flavorful cilantro, garlic, tangy limes and veggie stock makes this awesome soup. Spice up with chili oil or jalpenos. Serve it sraight from the blender or warm it a bit on a cold day. 

 

Add a side of a salad or bread. Serve this soup topped with croutons, diced avocados or roasted pepitas. Naturally green from the fresh ingredients.This is the only no cook soup packed with delicious flavors.

INGREDIENTS TO MAKE AVOCADO SOUP

 The list of ingredients to make this delicious soup are readily available in our panty.

 

    • Avocados : Make sure you pick ripe fresh avocados.
    • Cilantro : The main flavorful ingredient.Fresh cilantro adds nice flavor as well a vibrant color to the soup.
    • Onions : These are optional, but adds a nice taste to the soup.
    • Limes : Lime juice and lime zest adds the zing needed to balance the sweetness and creaminess of avocadoes. Replace with lemons too.
    • Garlic : Add a nice flavor, can be skipped if you do not like.
    • Cumin Powder : Cumin powder adds a nice flavor that goes well with all other ingredients.
    • Jalapenos/Green chilies: Adds heat to the soup. De seed jalapenos for less spice or use with seeds for more spicy version. Use as desired. 
    • Veggie stock : This is the liquid component that’s needed for the soup. It adds a nice flavor to the recipe. Use store brought or home made as desired.
    • Toppings : Roasted pepitas, croutons, diced cilantro, spring onions(only green part), chili oil, red chili flakes, a dash of hot sauce ect..

HOW TO MAKE AVOCADO SOUP?

You can make this soup quick as a whip, yes. Here ae two methods, while one reuqires cooking the onions the other is a no cook method. 

 

No Cook Method:

De seed a ripe avocado, remove the pit and dice into cubes.

 

Add all the ingredients in a blender and blend smooth. 

 

Taste and season salt and seasonings according to taste.

Cooking Method:

 

Dice a small onions and saute with little oil till soft. Add the stock and bring to a boil. Let cool and add the rest of the ingredients and blend smooth.

 

SERVING CHIOCES FOR THE AVOCADO SOUP

To Serve Cold

Serve as is right from the blender or cool it for a few hours like an ‘Avocado Gazpacho’ , I prefer this on a hot summer day. Add a dash of lime juice for a more refreshing flavor.


To Serve Hot:

For cold days this soup is better if served warm. So, just add the blended soup to a saucepan and gently warm it and serve.

Do not bring a boil that would alter the seperate the  of avocadoes and the stock.

SERVING CHOICES FOR THE AVOCADO SOUP

Serve hot or cold add some croutons on top or a slice of bread.

 

Add diced avocadoes, roasted peptitas, fresh diced cilantro, a dash of chili oil or any hot choice.

Avocado Soup

A no cook soup that's packed with delciousness all way. Lime juice, cilantro, creamy avocados, garlic and stock makes the quick soup and an awesome recipe to try. Cold or warm it's ready in 10 minutes.

Equipment

Ingredients

To Blend

  • 2 cups Vegatable stock
  • 1 large Avocado
  • cup Fresh Cilantro
  • 1 clove Garlic
  • ½ Jalapeno de seed for less spice (optional)
  • ¼ cup Lime juice
  • ¼ tsp Cumin powder
  • ½ tsp salt or to taste
  • ½ Onion (optional)
  • 1 tsp Oil

Garnish Options

  • 1 tsp Roasted pepitas ( or chioce of nuts)
  • 1 tsp Chili Oil / Hot Sauce
  • 1 tsp Spring onions diced (green part only)
  • ½ tsp Red pepper flakes

Instructions

No cook method

  • Add diced avocado and ingredients from to blend list in a blender or vitamix to a smooth consistency.
  • Taste and adjust seasonings as per taste. Add more stock or water for thiner soup.
  • Pour in a bowl and enjoy as is or warm gently in a pan for few minutes. Do not let boil.

Cooking method

  • In a pan fry onions till translucent and add stock. Bring to a boil and when cool add the rest of the ingredients and blend to a smooth.
  • Pour in a bowl and enjoy as is or warm gently in a pan for few minutes. Do not let boil.
  • Garnish with toasted pepitas or a dash if chili oil or croutons and serve.

Notes

Notes :
1.This recipe can be doubled if required.
2. To serve it warm, do not boil, boiling would alter the color and taste of avocadoes.
