For Blueberry Syrup
- 75 gms Fresh Blueberries
- 100 ml Water
- 2 tbsp Honey or sugar
For the Drink
- 2 tbsp Blueberry Syrup
- 1 tsp Lime juice
- Crushed Ice
- 120 ml Carbonated Soda
To Garnish
- 5 - 6 Blueberries to garnish
- 1- 2 Lime Slices
- 5-6 Mint Leaves
Instructions
To make blueberry syrup
- Boil water in a saucepan and add blueberries and cook for 2- 3 mins.
- Use a spatula to mash cooked berries and let it simmer for another 2 mins.
- Remove from heat and stain the liquid using a cheesecloth or stainer.
- Let cool and chill for at least an hour.
To make the mocktail
- To a glass add the blueberry syrup, lime juice, and crushed ice. Add fresh blueberries, a lime slice, and mint leaves, if desired.
- Fill the glass with sparkling water.Garnish with mint leaves, blueberries on top.Stir to combine.Enjoy!
