Broccoli paneer stir fry

Ingredients

  • 1 Broccoli Medium size
  • 100 gms Paneer
  • 2 inch Fresh Ginger
  • 5 - 6 Garlic
  • 2 tsp Red Chili flakes adjust as per spice level
  • 3 -4 tsps Oil
  • 1 tbsp Sesame seeds optional
  • Salt to taste

Instructions

Blanch Broccoli

  • Cut 1 medium head of broccoli into florets. Rinse them well.
  • Blanch broccoli in hot water for 10- 15 minutes.

Shallow fry paneer

  • Heat 1 tablespoon of cooking oil in a frying pan or wok over medium heat.
  • Carefully add the paneer cubes to the hot oil.Fry the paneer until it turns golden brown on all sides, turning occasionally.
  • Remove the fried paneer from the pan and set it aside on a plate.

Stir fry

  • In the same pan, add the remaining 1 tablespoon of cooking oil.
  • Sauté the garlic and ginger for a minute until it become fragrant.
  • Add red chili flakes and sesame seeds and sauté for another minute or less.

Cook the Broccoli and paneer

  • Add blanched broccoli florets to the pan.
  • Stir-fry for 5-7 minutes, or until the broccoli is tender-crisp. Add few drops of water if required. Cover and cook.
  • Season with salt. Stir occasionally.
  • Add the shallow-fried paneer cubes to the pan.
  • Gently toss everything together until the paneer is heated through and coated with the spices.
  • Serve the broccoli paneer stir-fry hot with rice, naan, or enjoy it on its own.
