Crispy Breakfast Potatoes

Crispy on the outside and soft inside, these breakfast potatoes are quick to make and needs only a tablespoon of oil.

Ingredients

  • 1 lb baby potatoes
  • 1 tbsp olive oil
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp coriander powder optional
  • 1 tsp red chili flakes
  • 1 tsp salt
  • 2 tbsp parmesan cheese grated or powder
  • 1 tsp diced parsely or coriander leaves

Instructions

  • Preheat the Air fryer or oven to 400 ° F
  • Wash and dry the baby potatoes. Slice them in half.
  • In a bowl add a tablespoon of oil and other seasoning except cheese and mix well to combine.
  • Add sliced potatoes and mix well to coat the potatoes with seasoning, grate parmesan cheese and give a stir.
  • Grease Air fryer tray or baking pan with oil. Spread the potatoes in a single layer and air fry for 12 minutes. Turn the potatoes and fry for 2- 3 minutes depending on the crispness needed.
  • If baking bake for 25 - 30 minutes, adjust time as per size and quantity.
  • Transfer to a serving bowl , garnish with diced parsley and extra cheese if needed. Serve warm with a choice of dipping sauce.

Notes

Pierce a fork to check the doneness of the potatoes. 
The time of the recipe is for baby potatoes using an air fryer.
If using yukon or other large potatoes cut them into cubes of similar size. Adjust the timing as per size and quantity. They may usually take 20 - 25 minutes.
