Cheesy Vegetable Nachos

Cheese baked nachos with vegetables is an appetizer that pleases the whole family. Hot out of the oven these nachos are any family's favourite. Loaded with veggies, beans, and cheese topped with jalpenos and olives are a must try recipe.

Ingredients

Pica de gallo

  • 1 cup diced tomatoes
  • ½ cup diced red onions
  • ½ cup diced green peppers
  • ¼ cup diced jalpenos
  • 2 tbsp lemon juice
  • salt
  • ½ tsp pepper
  • ¼ cup cilantro chopped

For Beans

  • 1 tsp olive oil
  • 1 tsp garlic One
  • 1 cup cooked beans
  • ¼ cup onions
  • ¼ cup chopped tomatoes
  • ¼ cup chopped green peppers
  • 1 tbsp lemon juice
  • 1 tsp chili powder/red pepper flakes add or minus as per spicy level
  • 1 tsp coriander powder
  • salt

To Assemble Nachos

  • 2 cups Tortilla chips
  • 2 cups mozerella cheese or any variety
  • ¼ cup sliced olives for garnish
  • 1 jalpeno sliced for garnish

Instructions

  • Combine all ingrdients from the pica de gallo list and set aside for 20 mins
  • Heat a medium pan and saute garlic, onions, green peppers, salt, lemon juice,coriander powder, red chili powder and cook. Add 2 tsps water and cook for 3- 4 minutes.
  • Layer tortilla chips in a plate and add a layer of beans , pic de gallo cheese and repeat to make layers as desired.
  • Top with cheese, jalpenos, olives and bake in a preheated oven at 350° F for 12 - 15 mins.
  • Serve hot with gaucomole , sour cream or as is.
