Cheese baked nachos with vegetables is an appetizer that pleases the whole family. Hot out of the oven these nachos are any family's favourite. Loaded with veggies, beans, and cheese topped with jalpenos and olives are a must try recipe.

Ingredients
Pica de gallo
1cupdiced tomatoes
½cupdiced red onions
½cupdiced green peppers
¼cupdiced jalpenos
2tbsplemon juice
salt
½tsppepper
¼cupcilantro chopped
For Beans
1 tspolive oil
1 tspgarlic One
1cupcooked beans
¼cuponions
¼cupchopped tomatoes
¼cupchopped green peppers
1tbsplemon juice
1tspchili powder/red pepper flakesadd or minus as per spicy level
1tspcoriander powder
salt
To Assemble Nachos
2 cupsTortilla chips
2cupsmozerella cheeseor any variety
¼cupsliced olivesfor garnish
1jalpeno slicedfor garnish
Instructions
Combine all ingrdients from the pica de gallo list and set aside for 20 mins
Heat a medium pan and saute garlic, onions, green peppers, salt, lemon juice,coriander powder, red chili powder and cook. Add 2 tsps water and cook for 3- 4 minutes.
Layer tortilla chips in a plate and add a layer of beans , pic de gallo cheese and repeat to make layers as desired.
Top with cheese, jalpenos, olives and bake in a preheated oven at 350° F for 12 - 15 mins.
