Morning Glory Muffins

A glorious way to start any day with this easy and healthy muffins that have a nice texture of carrots and delectable flavors of apple, raisins, coconut, pecans, and cinnamon in a single bite.

Ingredients

Dry Ingredients

  • 2 cups whole wheat/all purpose flour(260 gms)
  • 2 tsp baking powder
  • 2 tsp cinnamon powder
  • ½ tsp ground ginger or
  • ¼ tsp nutmeg powder optional
  • ¼ tsp salt

Wet Ingredients

  • ½ cup brown sugar (100gms) light or dark
  • 3 eggs or flax eggs flax egg recipe in notes
  • cup butter/olive oil/coconut oil (80 ml)
  • cup applesauce(60gms)
  • cup orange juice(60ml) any juice
  • ¼ cup honey(85 gms) (reduce to half for less sweeter muffins)3
  • 1 tsp orange zest
  • 1 tsp vanilla

Fruits ,Veggies and Nuts

  • 2 cups shredded carrots(260 gms) 3-4 approx
  • 1 cup shredded apple(140gms) 1 large
  • ½ cup chopped pecans (60gms)
  • ½ cup raisins(70 gms)
  • ½ cup coconut flakes optional
  • 2 tbsp pumpkin seeds to garnish muffins optional

Instructions

  • Line muffin tins with liners and preheat the oven to 425°F/220°C.
  • In a meduim bowl seive flour,baking powder and spice powders. Combine all dry ingredients together.
  • Whisk butter and sugar. Add eggs/flax eggs and mix.Add orange juice and zest. Add applesauce. Stir in grated fruits and veggies, chopped nuts.
  • Add the dry ingredients to the wet mixture and mix by folding.
  • Scoop the batter to the lined muffin tins and bake for 5 mins at 425°F. Reduce the temperature to 350°F and bake for 18- 21 mins till a toothpick comes out clean at center.
  • Let cool completely and Store in airtight container for upto 5 days at room temperature.

Notes

To Make Flax Egg : Add 1 tablespoon of ground flax seed powder to 3 tablespoons of water and set aside for 10 mins to form as a gel.
