A glorious way to start any day with this easy and healthy muffins that have a nice texture of carrots and delectable flavors of apple, raisins, coconut, pecans, and cinnamon in a single bite.
¼cuphoney(85 gms)(reduce to half for less sweeter muffins)3

2cupsshredded carrots(260 gms)3-4 approx
1cupshredded apple(140gms)1 large
½cupchopped pecans (60gms)
½cupraisins(70 gms)
½cupcoconut flakesoptional
2tbsppumpkin seedsto garnish muffins optional
Instructions
Line muffin tins with liners and preheat the oven to 425°F/220°C.
In a meduim bowl seive flour,baking powder and spice powders. Combine all dry ingredients together.
Whisk butter and sugar. Add eggs/flax eggs and mix.Add orange juice and zest. Add applesauce. Stir in grated fruits and veggies, chopped nuts.
Add the dry ingredients to the wet mixture and mix by folding.
Scoop the batter to the lined muffin tins and bake for 5 mins at 425°F. Reduce the temperature to 350°F and bake for 18- 21 mins till a toothpick comes out clean at center.
Let cool completely and Store in airtight container for upto 5 days at room temperature.
Notes
To Make Flax Egg : Add 1 tablespoon of ground flax seed powder to 3 tablespoons of water and set aside for 10 mins to form as a gel.
