Ingredients
1Spaghetti squashmedium
¼cuppeanuts
2dry red peppers or 1 tbsp red pepper flakes
2green chiliesoptional - for extra spiciness only
1lemon
1tspcumin
1 tspmustard seeds
10 -12curry leaves
½tspturmeric
¼tspasafoetida or hingoptional
salt to taste
Instructions
Spaghetti squash is very hard so use a small knife to pierce first to make a dent and cut throught it slowly. Slice the spaghetti squash pressure cook in Instant pot for 7 mins placing the bottom side down.
Let it cool and use a fork to scrape the flesh towards the center, fluffing them as you go into a plate.
Heat a oil in a pan, add mustard seeds, cumin. when then splutter add peanuts and fry till brown.
Add turmeric, curry leaves, red pepper flakes, green chilies.(adding all makes it very spicy so add accordingly to suit your spice level), hing and saute for a minute
Add fluffed spaghetti and give a good stir.Add salt and lemon juice and adjust according to taste. Cook by stirring for 3 more miniutes and turn off the stove.Serve warm.
