Made with fresh tomatoes , basil ,onions and garlic ,this roasted tomato soup is velvetty soft, creamy and flavorful. You would never go to canned soup after you try this.

Ingredients
For Roasted Tomatoes
3lbstomatoessliced
6-8garlic clovessliced
¼cup olive oil
salt and freshly ground pepperto season
To Cook
1meduimonion diced
1cupfresh basil
½tspred pepper flakes or powderfor heat (optional)
½tspcumin powder
Salt and pepper seasoning as required
1 tbspbutterfor rich flavor (optional)
1 tspsugaroptional (to remove tartness of tomatoes)
¼cupheavy creamoptional ( to add creaminess)
Instructions
Pre heat the oven to 400° F and grease a baking tray with oil to line the tomato slices, garlic. Drizzle oil and season with salt and pepper. Roast for 40 mins.
In a sauce pan add butter and saute onions till slightly brown, add fresh basil and cook for 2 minutes stirring occasionally. Add roasted tomaotes along with juice, cumin powder, red chilli flakes ,salt and stir to combime well.Turn off the stove.
Use an immernsion blender/ regular blender to blend soup till smooth. Pour in the same pan and add required water and adjust seasoning as per taste. Bring to a boil for 10 - 15 mins mins.
Add cream and simmer for 2 more minutes. Garnish with chopped basil leaves and serve warm with grilled sandwich or as is.
