Cranberry Pistachio Fudge

A perfect recipe for holidays, and a quick recipe to make in 15 minutes. This cranberry pistachio fudge to saves a ton of time and tastes heavenly. White chocolate, dried cranberries , pistachios ,sweet condensed milk and finally a hint of orange makes this yummy fudge. Sweet, sour, nutty, zesty, creamy and soft this white chocolate cranberry and pistachio fudge covers all audience at the same time.

Fudge and candy making sounds a little intimidating for many people, at least to me until i tried this recipe. This fudge neither requires fancy candy making thermometers nor any speical equiment. If you know how to melt chocolate they you can make this fudge. See easy peasy..

It has a balance of taste from sour cranberries to nutty pistachios. Both balances the sweeteness of the condensed milk and white chocolate. There is a hint of freshness from the orange zest so do not forget it.

INGREDIENTS TO MAKE CRABERRY PISTACHIO FUDGE

    • White Chocolate : This is the main ingredient, so use premuim quality baking chocolate or brands like Lindt or Ghirardelli. they melt great with out any lumps and do not leave any grains once melted. Candy chips usually do not yield a smooth end result.
    • Sweetened  Condesned milk : Condensed milk makes it sweet and creamy.
    • Dried Cranberries : Dried cranberries adds the tartness to the fudge.
    • Chopped Pistachios : Pistachios adds the nuttiness to the balance the sweetness of the other ingredients, while other nuts are okay its preferable to add pistachios.
    • Orange zest : Zest of one orange adds a nice flavor to the fudge.
    • Salt : A pinch of salt balances the sweetness well. Skip if your pistachios are salted.

HOW TO MAKE CRANBERRY PISTACHIO FUDGE?

Chop cranberries, pistachios and white chocolate into small chunks. Grate chocolate or chop into smaller pieces, the smaller the better.

 

Prepare a 9×9 square tin. Line with parchment leaving extra on the sides. This helps to easily lift the fudge out of the cake tin. Can use any square container also.

In a thick bottom pan , heat condensed milk for 3- 4 minutes till its hot, need not boil.

 

Remove from flame and now add grated or chopped white chocolate in small batches and mix to combine.

When all the chocolate melts with no lumps or chunks start adding the other ingredients and give a good stir.

 

Transfer the mixture into the prepared tin and spread evenly. Garnish with chopped nuts and cranberries if desired.

 

Refrigerate for atleast an hour before slicing to desired size. 

 

The fudge stays fresh in fridge for upto a week so it canbe made ahead of time too.

Equipment

  • 9x9 square cake tin

Ingredients

  • 1 can sweetened condensed milk
  • 20 oz white chocolate
  • 1 cup dried cranberries
  • ¾ cup chopped pistachios
  • zest of 1 orange use less if desired
  • pinch of salt (if using unsalted pistachios

Instructions

  • Line a 9 x9 square cake tin with parchment paper leaving extra to lift the fudge easily.
  • Pour a can of condensed milk and heat it up for 4- 5 minutes till hot. Remove from heat.
  • Add chopped white chocolate in batches and mix till it melts.
  • Add dried cranberries, orange zest, salt and pistachios and mix well.
  • Transfer the mixture into prepared cake tin and spread evenly. Ganish with extra nuts and cranberries.
  • Refridgerate for atleast anhour before slicing to pieces.
