Nachos layered with spiced beans, pica de gallo and layers of cheese are the easy peasy and cheesy snack to try. Perfect to try at Cinco de Mayo or any gathering.
Anyone would love to munch on cruncy chips and dip may it be salsa or a cheese dip. This recipe is a combo of all, that takes you to next level snacking.
If you are in for a little adventure make these nachos and take your snacking experience to next level.
Crispy and crucncy chips, loaded with cheese , pica de gallo, beans , veggies and jalpenos for the extra spice with every bite. Customize the add-in’s as per your taste enjoy a restaurant sytle recipe at the comfort of your own home.
So make it for your next game night or movie night.
INGREDIENTS AND POSSIBLE VARIATIONS
- Chips : Use any variety of tortilla chips, you can make your own too if you wish. Regular tortilla chips, flavoured cheese chips, dortitos works. Use what you have in like I do here.
- Beans : For a veggie version of this recipe beans play an important role. Use any variert here. Black beans, pinto, refried , red kidney beans or a combo of beans. I used red beans and black beans here. Use canned beans or dried.For dried beans soak in water for 3- 4 hrs and cook till soft in an instant pot or pressure cooker.
- Veggies : Green, Red, Colored peppers, jalpenos, red onions , cilantro , cooked corn ect. Again its totally a personel choice to use as many as you want or stick to just green peppers and jalpenos.
- Salsa/Pico de gallo : Use Salsa or Pica de gallo
- Cheese : Mozerella shredded, chedder grated, or any mexcian combo,monterey jack or American cheese the choices are vast any cheese you like works the best.
- Toppings/Ganishes : Diced Avacodo , pickles , olives , parsely , cilantro , lemon juice, spring onions, salsa, sour cream ect.
HOW TO MAKE PICA DE GALLO
Pica de Gallo is a mexican salsa. Fresh tomatoes, onions, jalpenos, peppers, lime juice, cilantro, salt and pepper are combined to makes this flavorful side authentic. Equal parts of tomatoes , cilantro, and good squueze of lemon, salt and pepper makes any thing awesome.
Jalepenos are the secret to get a authentic mexican flavor as well as heat.
Serve fresh pica de gallo , sour cream and chips and you couldn’t ask for more.
HOW TO MAKE BEANS FOR NACHOS
Beans are an awesome protein source for Vegetarian. To make this awesome bean filling, let’s start with cooked beans. While canned makes the process quicker and easier.
You can always start with any dry beans as pinto, black, red kidney beans. Soak the beans in water overnight and cook them as required.
In a pan add oil and saute onions, peppers and tomatoes. Season with salt pepper and hint of corinader powder if you like. Do not mind adding chili powder as needed for the heat. Adjust seasoning as per taste and cook till all the flavors are incorporated in the beans. Use water as needed, the final beans shouldn’t have water.
Smash the beans with the back of the spoon or a masher if you like a pureed bean kind of texture. Or leave as it.
ASSEMBLE THE NACHOS
By now the pica de gallo , cooked beans mixture are ready. The bean mixture can be cooked ahead of time and stored. So just before serving assemble the nachos.
To do this in a baking tray or bowl start by adding layers of nachos, pica de gallo , beans and cheese.
Easy peasy right? Add as many layers as needed. The tortilla chips or nachos will absorb any juices from beans and pica de gallo.
Add more cheese on the top layer and finsh off by adding sliced jaleponos and olives. Yes, they add the extra heat and taste to this recipe. You can also sprinkle pepper and chili flakes too if needed.
Bake for 15 – 20 mins in the preheated oven at 350 degree F or until the cheese melts and is bubbly.
You can broil the recipe for 5 minutes for a much cruchier toppings but keep an eye on it to avoid burning.
Look how beautiful they have turned. Enjoy with family for dinner, or serve a stater for any gathering. This is a very cool recipe to enjoy for game night too.
ALTERNATE METHODS OF COOKING NACHOS
IN A MICROWAVE
No one likes to use the conventional oven for smaller bathes?
For a smaller portion size platter you can microwave after assembling the recipe till the cheese melts.

Do not love using a microwave or an oven? No problem. Bake them on stove top as you would do your cakes. Place the plate on a sand or salt bath in a pan and cook.
Place the assembled plate in a pan and close with a lid. Cook on low flame for 15 – 20 mins until cheese melts.
TOP TIPS FOR THIS RECIPE
- Instead of using plain baked beans , cooking beans using some onions and taco seasoning will spice up the recipe a bit.
- If you don’t have taco seasoning use papirka, cumin, coriander powder or make you own seasoning as per taste.
- Combination of chips taste better so use per availabilty.
- If you don’t like using lot of cheese you can make a cheese dip recipe below and pour it over the chips in between layers and use shredded cheese on it.

Cheesy Vegetable Nachos
Ingredients
Pica de gallo
- 1 cup diced tomatoes
- ½ cup diced red onions
- ½ cup diced green peppers
- ¼ cup diced jalpenos
- 2 tbsp lemon juice
- salt
- ½ tsp pepper
- ¼ cup cilantro chopped
For Beans
- 1 tsp olive oil
- 1 tsp garlic One
- 1 cup cooked beans
- ¼ cup onions
- ¼ cup chopped tomatoes
- ¼ cup chopped green peppers
- 1 tbsp lemon juice
- 1 tsp chili powder/red pepper flakes add or minus as per spicy level
- 1 tsp coriander powder
- salt
To Assemble Nachos
- 2 cups Tortilla chips
- 2 cups mozerella cheese or any variety
- ¼ cup sliced olives for garnish
- 1 jalpeno sliced for garnish
Instructions
- Combine all ingrdients from the pica de gallo list and set aside for 20 mins
- Heat a medium pan and saute garlic, onions, green peppers, salt, lemon juice,coriander powder, red chili powder and cook. Add 2 tsps water and cook for 3- 4 minutes.
- Layer tortilla chips in a plate and add a layer of beans , pic de gallo cheese and repeat to make layers as desired.
- Top with cheese, jalpenos, olives and bake in a preheated oven at 350° F for 12 - 15 mins.
- Serve hot with gaucomole , sour cream or as is.

OMGGGGGG… That looks and sounds so delicious! I always like to mix in flavoured Doritos with regular tortilla chips for a bit of a punch in flavour. Your recommended toppings though – wow. Have to make this!
